Family Favourites

It's been a long time between posts and I'm missing my writing. Life has had other plans for me lately though, and it's been hard to find a spare moment. I'll fill you in with another posting soon. Life with the Yuen's is about to get pretty hectic!!

Making dinner tonight, I've was thinking about my family's favourite meals. Hands down, the winner is Spaghetti Bolognaise. I can guarantee we are not the only family to love a feed of saucy pasta though!

My recipe has evolved over the last 20 odd years, but today's version is my favourite and the most healthiest. I'll share it with you here -

Beck's Bolognaise

1 packet Woolworths Organic beef mince
1 jar Leggo's Bolognaise Pasta Sauce
1 can chopped organic tomatoes
1 brown onion, really, really, really finely chopped (kids hate onion!)
1 small red capsicum, finely chopped
1 carrot, grated
1 zucchini, grated
4-6 mushrooms, extremely finely chopped (I use my Tupperware chopper thingy - kids hate mushrooms too!)
Salt & pepper to taste

Fry the onion and capsicum until soft, then add the mince until browned. Pour in the pasta sauce and tomatoes and stir through. Add the rest of the vegies and the salt and pepper. Sometimes I add a splosh of wine if I have a bottle open. If I don't, then a splosh of water is fine too. Simmer this mixture for as long as you want! Usually 20-30 mins is enough. Serve with plenty of parmesan over the pasta of your choice.

This amount gives me enough to feed the 5 of us at least twice, making it one of the cheapest meals on the planet!! You could use the mince with lasagne, serve it on toast, in a baked potatoe, or even as a Shepherd's Pie base.

Oh, for those who are wondering why I'm cooking with meat? This is the only meal apart from a fish meal once a week, that isn't vegetarian. Why stop on a winner, hey?
